CHEESES

Grafton Classic Reserve Vermont  Cheddar - is a semi-hard cow’s milk cheese that has been
aged for two years, resulting in a rich and delicious flavor. Pairs well with a broad range of
wines: Chardonnay,  Sauvignon Blanc, and Pinot Grigio.

Manchego Madara - a hard Spanish cheese, aged and with a rich, nutty flavor with a mild
finish. The milk from the Manchega sheep is the only type used and the cheese it produces  
has a slight nuttiness and dried hay after notes. Goes well with Chardonnay, but shines with
Tawny Port and Madeira.

Brie Tour de Marze - at 60% fat content it is just shy of a triple-crème but is a double-crème.  It
has a mushroom aroma and a thick luscious paste with a slightly buttery and nutty flavor with
a nuance of garlic, cream and butter.  It becomes extra special with Chardonnay or Red
Zinfandel.

Laura Chenel’s Goat Cheese - in the late 1970’s and early 80’s Laura Chenel started an
American craze for goat cheese first selling them to Chez Panisse Restaurant and then
across the country. It shines with Red Zinfandel, Chardonnay and Sauvignon Blanc.

Vella 1 year select Dry Jack - the natural rind is hand-rubbed with oil, cocoa and pepper. This
cheese was created in 1915 in San Francisco. The rind looks like chocolate icing.
Underneath, the deep yellow cheese is hard, sweet and fruity with a taste of wine that is
delightful with Chardonnay.

Gruyere -  is named after a Swiss village. It is a traditional, creamy, unpasteurized, semi-soft
cheese.   Slightly grainy, the cheese has a wonderful complexity of flavors.  At first fruity, it later
becomes more earthy and nutty.  Pairs well with   Red Zinfandel.

Pecorino Toscano Stagionato - a classic Italian semi-hard sheeps milk cheese. Nutty, hearty,
salty with a fruity tang. This is a formidable table cheese that pairs well with red wine.

ACCENTS

Kalamata Olives - Messinia Estate olives (from Greece) of the highest quality to be
designated Divina Reserve with a  limited production of 4224 cases
